I generally dry mine for for 18 hours or more with the expectation that I want it really dry because I&#039;ll have it around a while. That never happens. 

I also have a big plastic jar that I use to marinate the meat in: it allows me to quickly and easily mix things up by rolling it around in my hands a few turns. I found the last time I made it that I can marinate it for as little as four hours (with regular rolling around) and still get a good soak on.</description>
